photos from the weekend

Friday marked the end of the first week of summer hours at work, meaning I got out at 12:30! It was really awesome to get home at a decent hour. I celebrated by getting a manicure then meeting Eric for happy hour.

We hit our usual joint, Cantina Dos Segundos, and I tried a blackberry margarita. It was good, but I can never have more than 1 because the sugar really upsets my stomach.

After heading home for a quick bite, Eric and I rode our bikes to Belgian Cafe for some beer week festivities. Eric is planning on doing a post on beer week, so I will only post one photo.

We each had 3 beers at Belgian, but they were all atleast 10% and rightly knocked us on our ass.

Somehow Saturday during the day got away from us. I went to the gym and Eric partook in more beer week festivities.

Saturday was a big night…IT WAS JOSH AND KELLY’S WEDDING!

The wedding was awesome! Eric and I are going to do a post completely dedicated to the wedding, but we had so much fun. I am so happy we became friends (through blogging!) and I couldn’t be happier for the two of them.

Sunday was a taking care of business day. We spent the morning running all kinds of errands.
After almost a year of looking, I finally found a print to hang above our bed. I was happy to finally frame it and get it hung Sunday morning.
I think the print sums up my life.
new poster!!

It’s two cats in a bike basket…and don’t mind the messy bed.

The cats spent the morning playing outside, and spent the afternoon sleeping.

Eric and I both agreed we have been indulging a little too much lately (beer week, weddings, visitors in town, etc.) and want to get back on track with our eating.
At Josh and Kelly’s wedding they served a delicious looking eggplant dish. It wasn’t vegan so I didn’t try it, but I haven’t gotten it out of my head. I decided to try to recreate my version. I sliced some eggplant then breaded it, and it’s now hanging out in my dehydrator.

Ok so a few sentences ago I wrote that Eric and I were going to really zone in on our eating, but we couldn’t pass up an offer from Juli, Abby and Adam for a Sunday night dinner at Kingdom of Vegetarians. Greasy Chinese food…all vegan!

For appetizer we had BBQ ribs

And scallion pancakes

I didn’t get pics of everyone’s entree, but a few of us tried some new things.

Deliciousness.

In other exciting news, Eric and I arrived in Philadelphia exactly one year ago today!

  1. Eric is so long waisted! I never noticed that before.
What kind of job do you have where you have different summer hours? I’m officially jealous!

  2. Lauren says:

Hah, I guess I have never noticed either.
I work for a children’s book publisher. Most of our customers are overseas anyways, so it’s pretty easy to work different hours. Right now I am working 7:30-5 mon-thurs and 8:30-12:30 on fridays. It’s so nice getting out early!

  3. Katie says:

    Congrats to Josh and Kelly!

  4. I love, love, love that cat-bicycle picture! and your lounge-y cats.

  5. Jackie says:

Is that from etdy bc I think I saw something similar when searching for bike screenprints. Chase won’t let me but a bike screenprint though. Guess I’m going to buy that muff evolution print I’ve been wanting for far too long.

  6. Amanda says:

Margaritas and awesome cat photos – can there be anything more gratifying?

  7. Amber Shea says:

Blackberry margarita, mmm! That might actually make me drink a margarita; I don’t normally like them. I love how your fingernails match the rim of the glass, hehe. Your bangs are really cute too, by the way!

The Chinese food looks awesome too, ‘specially the scallion pancakes.
If that eggplant dish you’re making turns out well, I’d love to get the recipe – I just got a dehydrator this week and am quickly filling up a to-make list of dehydrated dishes.

Hah I think my exact words to Eric were “Oh! Take a photo of me drinking the margarita, my nails match the glass!!”

So the eggplant turned out alright…I put too much breading on the slices though.
I made an eggwash with Ener-G, dipped the slices in that, then dipped them in a mixture of flour, panko bread crumbs, parsley, salt, pepper and oregano.

Eggplant does dehydrate really well though! I just slice it and marinate it in some olive oil and salt and pepper and let it cook for 12 or so hours. Delicious.
I can’t wait to see what you make.

This comment is getting really long.
