I could never post daily about all of the food I eat, but I still think it’s interesting when people share photos of a complete meal.
When I first starting reading blogs I was reading a lot of daily eats blogs. They were interesting at first, but seeing a person’s breakfast, lunch, and dinner day in and day out gets old fast. I also realized that in comparison to those people, I eat a lot. Like a lot a lot.
I snapped some photos of last night’s dinner. It was nothing special, but really delicious. Normally we cook a lot of food at night for dinner and to eat for lunch the next day.
To save more food for the next day I usually eat a salad first. This was kale, arugula, carrots, cabbage, jalapenos, and sunflower seeds. Topped with a nooch/cashew cheese mixture.
Because it’s cold and I am lazy the rest of the dinner consists of roasted vegetables. Warmed quinoa topped with potatoes, bell peppers, brussel sprouts, and collards.
January hit full force this week and the temperatures haven’t gone about 30 the past two days. We finally turned the fireplace on last night! One of my favorite parts of our house.
